Why Plastic Film Ruins Good Cheese

Wrap a cheese in impermeable film, and two things happen quickly. Respiration gases have nowhere to go, so they build up against the surface. At the same time, moisture leaving the paste condenses on the inside of the film and sits there.
The result is a slick, ammoniated surface and a muted flavor, problems that have nothing to do with the cheese’s quality and everything to do with the wrap. Cheesemongers know this. Customers usually blame the cheese.

The Two-Ply Structure Explained

Purpose-built cheese paper is not a single sheet. It is a laminate of two materials doing opposite jobs.

The inner layer is typically a waxed or coated film that sits against the paste. It holds enough moisture at the surface to keep the cheese from drying while still permitting gas transfer.

The outer layer is a porous paper that wicks excess moisture away and releases it into the air. That outward path is what prevents condensation from pooling.

Together, they create a controlled humidity envelope, damp enough to protect the paste, breathable enough to avoid suffocation. Single-sheet papers cannot do both at once, which is why two-ply is the counter standard.

Matching the Wrap to the Cheese

Different cheeses need different rates of exchange, and this is where a knowledgeable supplier earns their place.

Soft and bloomy rinds: brie, camembert, and similar, respire heavily and need the most breathable specification available. Restrict them, and ammonia builds fast.

Washed rinds are the most demanding category. High moisture, active surface bacteria, and a genuine need to breathe while retaining humidity.

Semi-firm and hard cheeses, cheddar, gouda, alpine styles, respire more slowly and tolerate a tighter wrap. Waxed cheese paper works well here.

Blues need room for their own aeration but must be wrapped so the mold does not transfer across a counter.

Where Cheese Paper Fits Among Our Papers

Cheese paper breathes at a specific, tuned rate. That makes it wrong for most other applications, and the reverse is equally true.

Custom Butcher Paper breathes too, but at a rate calibrated for meat rather than cheese, and it lacks the moisture-holding inner layer. For fried or oily items, Custom Greaseproof Paper is correct, since its barrier would suffocate cheese entirely. Deli counters wrapping finished sandwiches use Custom Deli Paper and Custom Sandwich Paper, and anything heading to long-term frozen storage needs Custom Freezer Paper.

Where cheese paper genuinely belongs is the cheese case, the creamery, and any counter selling cut-to-order wedges.

Printing and Roll Formats

The porous outer surface accepts ink readily, which makes cheese paper a strong branding substrate. Water-based, food-safe inks are standard in 1-color, 2-color, or full CMYK, with Pantone matching for counter identity.

Sheets suit cut-to-order service, typically 10″ × 10″ through 15″ × 15″ for wedges and larger for whole-wheel work. Rolls suit high-volume creameries cutting at the bench. Many counters pair printed sheets with a Custom Label carrying the cheese name, origin, and date, which is practical for the customer and useful for your merchandising.
