Within our range of food-safe wrapping papers, freezer paper is the most single-minded grade we produce. Every other paper balances competing demands: breathability against moisture, strength against drape. Custom Freezer Paper optimizes for one outcome only: keeping water inside the food.
Freezer burn is not burning, and it is not the freezer’s fault. It is sublimation: ice crystals on the food surface converting directly to vapor without passing through a liquid stage, then migrating away and refreezing elsewhere in the package.
The food left behind is dehydrated and oxidized. That grayish, leathery patch on a poorly wrapped steak is tissue that has lost its water content permanently. No amount of cooking restores it.
Because sublimation is driven by vapor moving from the food toward drier air, the only real defense is a wrap that vapor cannot cross. That is precisely what the poly coating provides.
Freezer paper is asymmetrical by design, and getting the orientation right matters.
The polyethylene-coated side faces the food. Poly stays flexible at deep-freeze temperatures, which is the critical property here. Wax coatings become brittle below freezing and crack along fold lines, opening exactly the pathways the wrap is meant to close.
The uncoated paper side faces outward. It accepts marker, grease pencil, adhesive labels, and printed branding — none of which adhere reliably to a poly surface. Staff can write cut, weight, and date directly on it, which matters more in a working freezer than most suppliers acknowledge.
Wrap it inside-out, and you lose both functions at once.
The material only performs if the fold does. The butcher wrap, sometimes called the drugstore fold, creates overlapping seams that press against the product rather than leaving air channels.
Air trapped inside the package is what sublimation feeds on. A loose wrap in premium paper will burn faster than a tight wrap in a lesser grade, which is worth training counter staff on if you sell frozen portions.
Freezer paper is specialized, and the boundaries are firm.
Custom Butcher Paper breathes deliberately, which is right for fresh display and completely wrong for frozen storage. Custom Cheese Paper manages a controlled humidity envelope for live cultures, a job freezer paper would ruin. One practical limitation worth stating plainly: the poly coating means freezer paper is not microwave-safe and cannot go in an oven. Thaw and unwrap first.
Coating thickness should track how long the product sits frozen. Short-term storage of a few weeks tolerates a lighter poly layer. Six months or longer, bulk meat programs, whole-animal processing, seasonal game: justify a heavier coating and a sturdier base sheet.

The uncoated outer surface prints cleanly, which makes freezer paper a better branding substrate than most barrier materials. Water-based food-safe inks are standard in 1-color, 2-color, or full CMYK.
